GF DF Banana & Egg Muffins

GF Breakfast Muffin

These Muffins are the perfect breakfast treat you can eat EVERY DAY!

Why can you eat these every day? Well basically it is because to make 3 of these muffins all you need is 1 egg & 1 small banana and a teenie tiny bit of coconut oil to grease.

So now you know the ingredients, all you need to do is:

  1. Pre Heat the oven 180°c
  2. Pop the egg and banana into a food processor until completely liquefied
  3. Grease 3 holes in a muffin tray before pouring the mixture into them.
  4. Cook for around 15-20 minutes
  5. Take out of oven let cool for a couple of minutes before running a knife or silicon spatula to remove from the pan.

They can be eaten hot or cold and will keep in the fridge for a couple of days and be re-heated if you wish.

Personally I love them with a sprinkle of cinnamon and a teaspoon of honey.
