When cooking for others I like to make stuff that they would have no idea was GF and this really does the trick.

Start by making the meatballs

  1. Pre-Heat oven to 180º
  2. Pop all the ingredients for the meatballs into a food processor and zap until completely mixed
  3. Roll into balls around an inch wide
  4. Place on a baking tray and bake for 20-25 minutes.

Whilst the Meatballs are cooking away, start on the Ragu:

  2. Finely chop: Onion’s and bell pepper and saute in the olive oil
  3. Grate: Carrot and courgette and add to the pan and stir thoroughly
  4. Add the tomatoes and mixed herbs as well as some water (I usually fill one of the tomato cans and put that in)
  5. Simmer down on a medium to low heat

Then serve either on its own or like we did with pasta/ spaghetti.
