My parents were coming over for dinner and I was feeling pretty fatigued, but still i wanted to make something from scratch, that was quick & easy but also wholesome, healthy and most importantly tasty!!!
When cooking for others I like to make stuff that they would have no idea was GF and this really does the trick.
Ingredients
Meat Balls
- 500g Extra Lean Beef Mince
- 1/2 a Large White Onion
- 1 Egg
- Mixed Herbs (Fresh or Dried)
- Shaved Parmesan
Ragu
- 1/2 Large White Onion
- 1 Large Red Onion
- 1 Courgette (Zucchini for those in the US)
- 1 Carrot
- 2 Bell Peppers (Red,Yellow or Orange)
- 2 Cans of Chopped Tomatoes
- Mixed Herbs (Fresh or Dried)
- Olive oil
- Water as needed
Instructions
Start by making the meatballs
- Pre-Heat oven to 180º
- Pop all the ingredients for the meatballs into a food processor and zap until completely mixed
- Roll into balls around an inch wide
- Place on a baking tray and bake for 20-25 minutes.
Whilst the Meatballs are cooking away, start on the Ragu:
Heat the oil in a large pan or wok
- Finely chop: Onion’s and bell pepper and saute in the olive oil
- Grate: Carrot and courgette and add to the pan and stir thoroughly
- Add the tomatoes and mixed herbs as well as some water (I usually fill one of the tomato cans and put that in)
- Simmer down on a medium to low heat
Then serve either on its own or like we did with pasta/ spaghetti.
