Demystification of Quinoa

A lot of people are a bit confused about Quinoa and I can safely say I was a bit scared of it to begin with, but it is something that I have fallen in love with since going gluten free.

So I really wanted to write a posts which explains all the benefits of quinoa, as well as a one stop guide to cooking it. Continue reading

My NHS experience with CFS – Part 3 (NHS CFS Foundation Course 2- Recap & Rest)

So I have to admit I wasn’t quite as enthusiastic and with it at the second part of the NHS CFS Foundation course, as I had way over done it earlier in the week, we have all been there at some point.

Like parts 1 & 2 of my NHS experience with CFS, guiding from my experience with my GP and assessment (Link) and the first foundation seminar (Link), this post I will talk through what I got out of the second and final foundation seminar, through both what leader taught us and from comments from other service users, as well as providing you with the handouts that I received on the day. Gluten Free Junk Food Cravings- Pt2 – The sweet tooth

MS GF Choco CakeGluten Free Junk Food Craving (Link) post, where I illustrated my craving for pizza and chips, that I managed to fulfil without breaking my GF diet; has by far been my most popular post to date. Therefore I thought that I would share another fairly similar tale.

A week before my final charted accounting exam (Fingers crossed!!), I was feeling a bit down in the dumps, a bit emotional and probably hormonal. I had to go to the Mall to take my Macbook to the genius bar, is it kindly decided to stop turning ok… Naught MacBook!!!! I was just in one of those moods, I was exhausted all I wanted to do was slump down when I got home was to have a bit of a Netflix binge and stuff my face, with cake and chocolates, and have a bit of a pity party. Gluten Free Goodies at Temple Quay Markey

Temple Quay Market 1Bristol as a city is full of great little finds, one of my favourites pre gluten free days was that every Thursday during the summer months, there would be this awesome food market, with alternated between a market in which you could by produce or one that would offer tasty meals you could eat for lunch.

Agrazingly good steak- A GF review of Graze (Bath)

Graze BathSo for my birthday the day after I was take to The Ox in Bristol (Link), I was taken to Graze in Bath (Link) by my parents, again it was a surprise so I was a little anxious as I couldn’t phone ahead.

We got to Graze and it is beautiful, unlike the Ox which is stunning in a probation era styled, Graze was wonderfully light and airy, and an amazing outside area. It is located right next to the train station so is very easy to get to even if you don’t live in Bath. Continue reading

Simplifying Cognitive Behavioural Therapy (CBT) for CFS/ME

I have had a lot of involvement in CFS/ME Facebook groups and forums, and there is a lot of differing views of what CBT is for CFS. This I think is due to a one size fits all approach of CBT being used by a lot of medical professions, so for instance using the same methods of CBT to help depression and CFS just isn’t the best way forward.  It really seems like what your told differs vastly on your postcode, and how much experience your doctor/ OT has with CFS or if their experience is in mental health.

Gluten Free Carrot Cake Cupcakes

Gluten Free Carrot CupcakeFor ages and ages I had been wanting/ dreaming of having a Kitchenaid a bright purple Kitchenaid, ogling them every time I went through a department store, saw one on TV or when I looked at them online (Yes I am aware I was obsessed), but being on significantly less hours at work I really couldn’t justify the cost.

But it turns out I am a very very lucky girl who has the most amazing boyfriend in the world who got me one from my birthday YAY!!!!

I am currently using all of my energy for my up and coming final accounting exam, but I thought that it would be criminal to wait 2 1/2 weeks to use it, so I made these amazing GF carrot cake cupcakes with soft cheese frosting. Continue reading

Gluten Free Junk Food Craving

Gluten Free Pizza and chips  I’m tired, it has been just one of those days, everyone gets them. All I want is to stuff my face with junk food and defiantly cannot be bothered to cook. Then my mind jumps straight for … dun dun dun! Pizza and chips! Once it is in my mind, it is no longer a want but a need, now I have a one track mind. I am already on my way to Tesco, I pull up in the car park, and it dawns on me; I have probably picked the worst meal ever for someone who is GF.
I huffed and puffed myself into Tesco, trying to rack my mind for something else I wanted, but I couldn’t get my mind off of pizza and chips. So I just figured I would have to start from scratch, not exactly my quick and junk food but being GF often just have to accept that compromises must be made.

My NHS experience with CFS – Part 2 (NHS CFS Foundation Course 1)

My NHS experience with CFS – Part 2 (NHS CFS Foundation Course 1)

As I mentioned in a previous posts (link)I was diagnosed with CFS and was seen by specialist clinic within about 9 months of symptoms first appearing. Which is really fast compared to other peoples experiences, I attribute this to an amazing GP.

So I really wanted to document my experience with the specialist NHS clinic, because before I got seen I had no idea what to expect, and I know so many people struggle to get any treatment for CFS.

I had heard very mixed reviews from different people, which I think might be due to what different people expect to get from the clinic – there is no miracle cure to CFS/ME so don’t expect that.

I went in with an open mind and was very glad. In this post I will talk through what I got out of the first foundation seminar, through both what leader taught us and from comments from other service users, as well as providing you with the handouts that I received on the day.
