So for my birthday he booked The Ox (Link) as a surprise, I knew he was taking me out but had no idea where so I was feeling a little anxious as I had recently be accidentally glutened whilst eating out and hadn’t been able to call ahead etc to check there were options.

When we arrived outside the restaurant I was so excited I had wanted to go to The Ox since its opening last year, it is re known for its fabulous stakes and cocktails (which is to be expected as it is twined with the Milk-thistle). Continue reading

My NHS experience with CFS – Part 1 (GP and referral to specialist clinic)

I know that a lot of people have had very bad experiences with doctors and the NHS, however this really hasn’t been the case for me.

First step for me was having a fab GP, she was supportive from the outset and explained that she thought I had CFS, but had to do a load of tests to rule everything else out.

It took from Nov13- Jan14 to get through that processes, as I needed to have a couple for re-tests done, after all came back within range ‘normal’, my GP gave me the CFS diagnosis and referred me to one of the 14 specialist centres in the UK for the development of services for people diagnosed with Chronic Fatigue Syndrome/ME. Demystification of meditation

There is a lot of hype and mystery about meditation, however it is really doesn’t have to be complicated, full of odd poses, incense and candles, where you have to completely clear your mind from everything to gain some sort of inner peace.

However it can be so simple and it has helped me so much in many ways, during my recovery process with CFS it has been invaluable.

Ways in which meditation has helped me:

  • Sleep
  • De-stress
  • Rest breaks

Gluten Free Toffee Popcorn (and salty variety)

Toffee PopcornI had a few friends coming over for a few drinks and a jolly good catch up at the weekend, and I wanted there to be some snack nibbly bits, and was wondering what a nice and easy GF option would be.

So pop corn was most certainly the answer, naturally gluten free, super quick and easy to make a variety of flavours- this time I made a nice buttery salty savoury and a sweet and sticky toffee.

Halloumi & Roasted Mediterranean Vegetables with Quinoa

Quinoa and HalloumiEach week my house mates and I cook a house meal, and since going GF both of them have got on board. One of my house mates cooked an amazing dish and introduced me to the wonderful world of Quinoa.

For those of you like me until recently knew nothing about Quinoa, it is an amazing naturally GF product which has high levels of protein, calcium, iron and B vitamins as well as being super filling so brilliant all round. Continue reading

Chocolate and Amaretto Frosting

Chocolate FrostingI made up this frosting concoction to go with my fabulous Amaretto & Chocolate Cake (Link) its so simple, tasty but truly very sickly.

I made this cake on a hot day, so I needed to pop it in the fridge as the frosting started to melt and the cake went a little lopsided – easily fixed by straightening it up then popping it in the fridge if this does happen.

This Recipe makes enough to coat the whole of a cake and to fill the centre.

It is a little chewy like a brownie at the edges and a cross between a cake and brownie on the inside.
