The Benefits of Corn- Invisible Illness Awareness Day 2

For those who don’t know this week is invisible illness awareness week (8-14th September) and to raise awareness I am going to post a blog a day whether that be in my new personal updates section or even a recipe.

Incredibly Delicious Peanut Butter Fudge

FudgeLike most offices we defiantly have a bake/cake policy when it’s your birthday or for basically any other reason. So when my friends last day coincided with me passing my final chartered accounting exam, it was defiantly time to make something a little special.

My friend absolutely loves peanut butter, so I put my thinking hat on and remembered this absolutely amazing PB fudge the other week. So t I decided it would make a great leaving pressy for a friend but also be something a lil different for ‘Fat Friday’ at the office. Only problem is I have never made fudge before in my life nor did I have a clue how to do it. But how hard could it be right?

Well I suddenly realised most recipes are a bit fiddly and required a sugar thermometer and careful timings, well I have to be honest that isn’t what I called fun. But I found a great fudge making technique online which doesn’t require a thermometer or careful timings YAY!!!

Variety is the spice of life- GF Lunch at Friska

Today a friend asked me if I wanted to meet up for a catch up at lunch. I jumped on the offer to have something other than my standard jacket potato and tuna from my works canteen, pretty much the only GF option.

As I don’t have a full hour break due to being on a phased return to work, I needed something quick and most importantly had a non potato GF option. So Friska on Victoria Street it was. Speedy Gluten Free Falafels & Chickpea Flat breads

Falafel 1I love falafels, they are just soooo tasty!!!! So many recipes are quite complicated and take a while due to having to soak chickpeas for agesss. When I discovered this recipe I was very sceptical to how nice they would be considering from start to finish they only take about 10 mins.
