Incredibly Delicious Peanut Butter Fudge

FudgeLike most offices we defiantly have a bake/cake policy when it’s your birthday or for basically any other reason. So when my friends last day coincided with me passing my final chartered accounting exam, it was defiantly time to make something a little special.

My friend absolutely loves peanut butter, so I put my thinking hat on and remembered this absolutely amazing PB fudge the other week. So t I decided it would make a great leaving pressy for a friend but also be something a lil different for ‘Fat Friday’ at the office. Only problem is I have never made fudge before in my life nor did I have a clue how to do it. But how hard could it be right?

Well I suddenly realised most recipes are a bit fiddly and required a sugar thermometer and careful timings, well I have to be honest that isn’t what I called fun. But I found a great fudge making technique online which doesn’t require a thermometer or careful timings YAY!!!

Variety is the spice of life- GF Lunch at Friska

Today a friend asked me if I wanted to meet up for a catch up at lunch. I jumped on the offer to have something other than my standard jacket potato and tuna from my works canteen, pretty much the only GF option.

As I don’t have a full hour break due to being on a phased return to work, I needed something quick and most importantly had a non potato GF option. So Friska on Victoria Street it was. I had been there many times before I was GF and all their food is super tasty and I thought, it is just the sort of place that would have GF options (And I was right!). Continue reading

Speedy Gluten Free Falafels & Chickpea Flat breads

Falafel 1I love falafels, they are just soooo tasty!!!! So many recipes are quite complicated and take a while due to having to soak chickpeas for agesss. When I discovered this recipe I was very sceptical to how nice they would be considering from start to finish they only take about 10 mins.

I decided that the falafels by themselves simply wasn’t enough chickpeas, I may or may not be obsessed! So I decided to make these gorgeous Chickpea Flat breads/ Pancakes they are somewhere in between a pancake and a flat bread. Continue reading

Demystification of Quinoa

A lot of people are a bit confused about Quinoa and I can safely say I was a bit scared of it to begin with, but it is something that I have fallen in love with since going gluten free.

So I really wanted to write a posts which explains all the benefits of quinoa, as well as a one stop guide to cooking it. Continue reading

Gluten Free Junk Food Cravings- Pt2 – The sweet tooth

MS GF Choco CakeGluten Free Junk Food Craving (Link) post, where I illustrated my craving for pizza and chips, that I managed to fulfil without breaking my GF diet; has by far been my most popular post to date. Therefore I thought that I would share another fairly similar tale.

A week before my final charted accounting exam (Fingers crossed!!), I was feeling a bit down in the dumps, a bit emotional and probably hormonal. I had to go to the Mall to take my Macbook to the genius bar, is it kindly decided to stop turning ok… Naught MacBook!!!! I was just in one of those moods, I was exhausted all I wanted to do was slump down when I got home was to have a bit of a Netflix binge and stuff my face, with cake and chocolates, and have a bit of a pity party. Temple Quay Market 1Bristol as a city is full of great little finds, one of my favourites pre gluten free days was that every Thursday during the summer months, there would be this awesome food market, with alternated between a market in which you could by produce or one that would offer tasty meals you could eat for lunch.

Gluten Free Carrot Cake Cupcakes

Gluten Free Carrot CupcakeFor ages and ages I had been wanting/ dreaming of having a Kitchenaid a bright purple Kitchenaid, ogling them every time I went through a department store, saw one on TV or when I looked at them online (Yes I am aware I was obsessed), but being on significantly less hours at work I really couldn’t justify the cost.

But it turns out I am a very very lucky girl who has the most amazing boyfriend in the world who got me one from my birthday YAY!!!!

I am currently using all of my energy for my up and coming final accounting exam, but I thought that it would be criminal to wait 2 1/2 weeks to use it, so I made these amazing GF carrot cake cupcakes with soft cheese frosting. Continue reading
